Maybe some of the group would rather like to make breakfast instead. This would help spread the labor and still count to the pot luck. my 2 cents
It seems everyone wants to hit the road shortly after waking up in the morning, so pre-made breakfast items would be best. The last time I made pancakes for a large group on a run, by the time the last person was served, everyone else was already packed up, aired down and sitting in their vehicles with their engines warmed up, ready to go. I still had to clean up the breakfast prep and do my own packing. I frantically tore down my tent, tossed everything in the truck, and the kitchen items got dumped into a big bag to deal with later. That is also the time I learned that I should try out a new stove before a trip. No matter how much you like bacon, when it is burnt to a crisp, it's really not all that good.
Edit: BTW, everyone was very helpful and kind to me on that trip. They knew I didn't have a clue what I was doing and were very understanding just in general. I'm sure they wouldn't have had a problem waiting for me. That is typical of SCCX members. I just didn't want to hold them up.
